I used to be addicted to Nature Valley honey oat granola bars. I had one almost every morning with my coffee.....until my friend introduced me to her own super-easy-to-make-at-home granola bars (thanks Becky for the recipe!) I've made a few batches and each one has flown out of my kitchen. I never thought I'd be the sort of person who made their own granola and Nature Valley still holds a special place in my breakfast routine - but this really is tasty AND really easy, I promise. Here's the recipe and some simple directions - it's my kind of baking because this is the sort of recipe where you can free-style. If you're not a huge fan of pumpkin, add more applesauce and honey. Want to add some nuts? Just go easy on the choc chips. You get the idea!
Pumpkin Granola Bars:
3 1/4 cup Oats 1/2 teaspoon pumkin pie spice 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/2 teaspoon salt 3/4 brown sugar 1/2 cup pumpkin puree 1/4 cup applesauce 1/4 cup honey 1 teaspoon vanilla extract 1 cup chocolate chips 1/2 cup raisins
