What you need (feeds 2 people): - 1 cup avocado chopped into cubes - 1 cup tomato chopped into cubes - 1 cup mango chopped into cubes - 2 1/2lb Salmon fillets - 1/2 cup brown rice - 1 lemon - salt / pepper - tin foil - olive oil / butter - balsamic vinegar
Cooking Instructions: 1. Set the oven to 450 2. Place the salmon fillets on large individual pieces of tin foil (big enough to wrap them up in a loose parcel). Coat the top side with ground pepper, a drizzle of lemon juice and a small drizze of olive oil or a little knob of butter. Wrap the foil around the salmon in a loose parcel. 3. Place the parcels on the top shelf in the oven for 20 minutes 4. Set the rice to boil according to packet instructions (approx 10 minutes) 5. Put the avocado, tomatoes and mango in a bowl and drizzle with lemon juice and balsamic vinegar - toss to mix up all the ingredients 6. After 20 minutes unwrap the salmon and place under the grill for 2 minutes. Unwrap fully and serve on a bed of brown rice with avocado, mango and tomato salad on the side.
