Since I've been injured I've been trying hard to keep in shape so that I haven't lose all my fitness and strength by the time I can kite again. Which is difficult because there have definitely been days when frustration has led me to chocolate, biscuits and wine! But life's too short right?!
On the good days when I'm feeling motivated, I love coming up with yummy recipes that are easy to cook (I'm a 20 minute meal kinda gal) and a few friends have recently asked me for the recipes for some of my dishes. So I've decided to do regular recipe posts to share my healthy meal ideas with other people who have busy lives but who want to stay in shape without going on some crazy diet. Most importantly I use ingredients that don't break the bank so you have money left over to buy new kiting kit :)
Recipe 1: Pork steaks with quinoi salad and a fat free mushroom cream sauce.
Ingredients for 2 servings: - 2 thick pork steaks - 1 small pot fat free sour cream - 1 cup plain uncooked quinoi - vegetable stock - 1 cup raw broccoli - 2 cups chopped mushrooms - 1 cup sugar-snap peas - 1 cup cherry tomatoes - dill - salt and pepper - olive oil
Cooking instructions - Prepare one cup of vegetable stock and pour into a pan with the quinoi and 1 cup of boiling water. Bring to the boil and the summer for 10-15 minutes until the quinoi is light fluffly to taste. If it boils dry just add water until the quinoi has cooked fully. Set aside in a covered dish.
</a< - Add a splash of olive oil to a frying pan and fry pork steak for 5-7 minutes on each side. - When the pork steaks are almost ready, fry the mushrooms for 3-4 minutes until they are soft and brown. Add some salt and pepper and then add the sugar snap peas for 1-2 minutes. Be careful not to overcook the peas so that they stay crunchy and retain their flavour. - Uncover the quinoi and stir in the broccoli florets and cherry tomatoes.
